Greens, Beans and Bacon Soup

Ingredients
- 3 slices bacon, cut crosswise into 1/4-inch pieces
- 3 cups packed chopped kale
- 2 1/4 cups water
- 1 can (15 oz) cannellini beans, drained, rinsed
- 1 can (14 oz) roasted garlic-seasoned chicken broth
- 1 cup frozen chopped onion
- 1/4 teaspoon pepper
- Red pepper sauce, if desired

Step1In large saucepan, cook bacon over medium-high heat 8 minutes or until crisp. Reserve 2 teaspoons drippings in pan; discard excess drippings.

Step2Add kale, water, beans, broth, onion and pepper to bacon and drippings in pan. Stir in pepper sauce. Heat to boiling over high heat; reduce heat. Cover; simmer 25 minutes. Serve immediately.
