Meatballs stuffed in bread with cheese give you delicious sandwiches for dinner - perfect for Halloween.

Ingredients

  • 1 lb ground beef round
  • 1 medium onion, finely chopped (1/2 cup)
  • 1/2 cup Progresso™ Italian-style bread crumbs
  • 2 tablespoons ketchup
  • 1/4 teaspoon freshly ground pepper
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 can (15 oz) Italian-style tomato sauce
  • 4 hero sandwich rolls (6 inch), split
  • 8 slices (1 1/2 oz each) smoked provolone cheese

    In large bowl, mix beef, onion, bread crumbs, ketchup, pepper and eggs. Shape mixture into 16 (1 1/2-inch) meatballs.

    In 12-inch skillet, heat oil over medium-high heat. Cook meatballs in oil 8 to 10 minutes, stirring frequently, until thoroughly cooked and no longer pink in center. Remove meatballs from skillet; discard drippings. Wipe out skillet. Return meatballs to skillet; add sauce. Reduce heat to low; cook 8 minutes.

    Set oven control to broil. Line cookie sheet with foil; place rolls on cookie sheet. Place 4 meatballs in each roll; top with 2 cheese slices. Broil sandwiches with tops about 5 inches from heat 1 minute or until cheese is melted.
