Ingredients

  • 1 1/2 cups shortening
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 box Pillsbury™ Funfetti® Premium Cake & Cupcake Mix
  • 1 cup flaked coconut
  • 1 cup cinnamon multigrain flakes cereal, slightly crushed
  • 2 cups old-fashioned oats
  • 1 teaspoon sea salt

Steps

    Heat oven to 350°F.
  • 2
    In large bowl, beat shortening and sugars with electric mixer on medium speed until well blended. Add eggs; beat well.

    Stir in cake mix. Add coconut, cereal and oats; stir until well mixed.

    Drop dough by 1/4 cupfuls onto large ungreased cookie sheets, 2 inches apart. Sprinkle top of each with a pinch of sea salt.

    Bake 14 to 16 minutes or until cookies are light golden brown and cracked on top. Cookies will be very soft; cool 10 minutes before removing from cookie sheets. Store in covered container.

    Either sweetened or unsweetened coconut flakes can be used in this recipe.

    We used old-fashioned oats in this recipe, but quick-cooking oats can be used as well.

    Cookies turn out best when baked one sheet at a time on middle oven rack.

    Use a cookie scoop to make portioning cookie dough even faster and more consistent. A #16 scoop is the same size as a measuring 1/4 cup.
