Fiber One™ cereal makes an incredibly crunchy coating for this tasty oven-fried chicken!

Ingredients

2
cups Fiber One™ Original bran cereal
1/4
cup dry ranch salad dressing and seasoning mix
4
egg whites
4
boneless skinless chicken breasts

Steps

  • 1 Heat oven to 400°F. Spray large cookie sheet with cooking spray. Place wire rack on cookie sheet.
  • 2 Crush cereal into fine crumbs. Place crumbs in shallow dish. Stir in ranch seasoning mix, mixing well. In another shallow dish, place egg whites; beat slightly.
  • 3 Dip chicken breasts, one at a time, into egg whites. Coat entirely with cereal mixture. Place on cookie sheet.
  • 4 Bake about 30 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Serve warm, and enjoy!

Expert Tips

Crush cereal in food processor, or place in large resealable food-storage plastic bag, and crush into fine crumbs.

Sprinkle with parsley, if desired, just before serving.
