Ingredients

  • 1 large onion, chopped (1 cup)
  • 1 medium red bell pepper, chopped (3/4 cup)
  • 1 clove garlic, finely chopped
  • 2 cans (14 oz each) Progresso™ marinated artichoke hearts, drained, coarsely chopped
  • 1 package (8 oz) fat-free cream cheese, cut into cubes
  • 1 container (8 oz) reduced-fat sour cream
  • 4 oz blue cheese, crumbled (1 cup)
  • 1/4 teaspoon freshly ground pepper
  • Toasted baguette slices, if desired

    Heat 10-inch nonstick skillet over medium-high heat. Add onion and bell pepper; cook 5 minutes, stirring occasionally, until softened. Add garlic; cook 1 minute longer.

    Spray 2 1/2-quart slow cooker with cooking spray. In slow cooker, stir together onion mixture, artichokes, cream cheese, sour cream, blue cheese and pepper.

    Cover; cook on Low heat setting 2 hours, stirring occasionally, until cheese is melted and mixture is thoroughly heated. Serve with baguette slices.
