Baked Brie and Brandied Mushrooms

Have this versatile baked appetizer ready in 25 minutes! Made using brie cheese, mushrooms, almonds, brandy and herbs, this dish can be served as either dip or spread.

Baked Brie and Brandied Mushrooms

Ingredients

  • 1 tablespoon butter or margarine
  • 2 tablespoons slivered almonds
  • 1 cup chopped fresh mushrooms
  • 2 cloves garlic, finely chopped
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried tarragon leaves
  • 1/8 teaspoon pepper
  • 1 tablespoon brandy
  • 1 round (8 oz) Brie cheese
  • 2 sprigs fresh tarragon, if desired

Instructions

    Heat oven to 375°F. In medium skillet, melt butter over medium heat. Add almonds; cook and stir 2 to 3 minutes or until almonds are browned. Stir in mushrooms, garlic, tarragon, pepper and brandy. Cook and stir 1 to 2 minutes or until mushrooms are tender. Remove from heat.

    In ungreased decorative shallow baking dish or 8- or 9-inch glass pie plate, place cheese; spoon mushrooms over top.

    Bake 10 to 12 minutes or until cheese is soft. Garnish with tarragon sprigs. Serve as a dip, or spread on melba toast rounds or crackers.
