Spicy Sweet Potato Bread

Ingredients
- 1/2 cup sugar
- 1/2 cup mashed canned or cooked sweet potatoes*
- 1/3 cup skim milk
- 1 tablespoon oil
- 1 egg or 2 egg whites
- 1 cup All Purpose Flour
- 2 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/2 cup dried currants
Instructions

Step1Heat oven to 400°F. Spray 8 or 9-inch square pan with nonstick cooking spray.

Step2In large bowl, combine sugar and sweet potatoes until well mixed. Add milk, oil and egg; mix well.

Step3Lightly spoon flour into measuring cup; level off. Add flour, baking powder, nutmeg and allspice to sweet potato mixture; stir until well combined. Stir in currants. Pour batter into sprayed pan.

Step4Bake at 400°F. for 12 to 19 minutes or until bread is light golden brown and center is firm to the touch. Cut into squares. Serve warm or cool.
