Steps

  • 1
    Heat oven to 375°F.
  • 2
In large bowl, stir cake mix, oil and eggs with spoon until well mixed. Shape tablespoonfuls dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. With bottom of glass dipped into flour, flatten to 1/4-inch thickness.
  • 3
Bake 6 to 8 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack.
  • 4
Spread frosting over warm cookies. Immediately sprinkle each with candy sprinkles from frosting. Store in airtight container.

  • Because you are only blending the dry cake mix with a fraction of the liquid called for to mix up a cake batter, the leavening in the mix isn’t activated in the same way in the oven. This method just moistens the dry ingredients and creates a type of sugar cookie that is addictive with a quick swipe of the frosting, topped with a shower of colorful sprinkles.

Expert Tips

  • Make your own funfetti if you only have a yellow or white cake mix and a tub of vanilla ready-to-spread frosting. Stir in your favorite decorating sprinkles—from multi-color nonpareils (little round sprinkles) to tiny shapes of any type.
  • Tender sugar cookies are done when the bottoms of the cookies are evenly browned and the outer edges are a very light golden brown. Be careful to watch the baking time—pulling the baking sheets out of the oven a minute or two early if you like a chewier cookie.
  • Spreading the frosting onto the cookies while they’re warm makes it a little glazy—especially delicious when the cookies are eaten nearly straight out of the oven.
