Ingredients
Bread Pudding
- 1 cup sugar
- 1 teaspoon nutmeg
- 2 cups skim milk
- 1 teaspoon vanilla
- 2 eggs
- 10 cups French bread cubes (1-inch)
- 2/3 cup raisins
Sauce
- 1 cup firmly packed brown sugar
- 1/2 cup light corn syrup
- 2 tablespoons rum*
- 2 tablespoons margarine or butter
- 1/2 teaspoon vanilla
Instructions

Step1Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray.

Step2In large bowl, combine sugar, nutmeg, milk, 1 teaspoon vanilla and eggs; beat with wire whisk until smooth. Fold in bread cubes and raisins. Pour into sprayed baking dish.

Step3Bake at 350°F. for 40 to 45 minutes or until knife inserted in center comes out clean.

Step4Meanwhile, in small saucepan, combine all sauce ingredients. Cook over medium heat until mixture comes to a boil, stirring constantly. Boil 1 minute. Remove from heat; cool slightly. Serve warm sauce over warm bread pudding.
