Ingredients

  • 3 1/2 cups milk
  • 1/3 cup dried cherries
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon butter
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup uncooked instant white rice
  • 1 box (4-serving size) white chocolate sugar-free instant pudding and pie filling mix
  • Cinnamon sticks, if desired

Steps

  • 1
In 2-quart saucepan, stir 11/2 cups of the milk, the cherries, brown sugar, butter, cinnamon and salt. Heat to boiling over medium heat, stirring occasionally. Stir in rice; reduce heat to low. Cover; simmer 5 minutes, stirring occasionally.
  • 2
Meanwhile, make pudding mix as directed on package, using remaining 2 cups milk. Stir prepared pudding into rice mixture. Serve warm. Garnish with cinnamon sticks.

  • Using instant pudding mix offers a shortcut to getting the creamy texture of traditional long-cooking rice pudding.
