Ingredients

  • 1/2 cup stir-fry sauce
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 lb. orange roughy fillets

Steps

    In 2-cup saucepan, combine stir-fry sauce, lemon peel, lemon juice and honey; mix well.

    Spray broiler pan with cooking spray. Place orange roughy fillets on pan. Brush each with stir-fry sauce mixture.

    Broil 4 to 6 inches from heat for 3 minutes. Turn fish; brush with stir-fry sauce mixture. Broil an additional 3 to 5 minutes or until fish flakes easily with fork. Bring any remaining stir-fry sauce mixture to a boil. Serve fish with warm mixture.

    Before cooking the fish, line the broiler pan and the tray under the pan with foil. Pierce holes in the foil with a knife so the juices can drip through to the tray underneath. When you're done cooking, cleanup will be a breeze!
