Slow cook this delicious salad using sweet potatoes and maple syrup – perfect for dinner. MORE+ LESS-

large sweet potatoes (5 1/2 lb), peeled, cut into 2-inch cubes

cup orange juice
3/4
cup whipping cream
1/2
cup real maple syrup
1/4
cup butter, cut into pieces
1/2
teaspoon salt
1/4
teaspoon freshly ground pepper
1/2
cup chopped pecans, toasted

    Spray 6-quart slow cooker with cooking spray. Place sweet potatoes in slow cooker; pour orange juice over potatoes.

    Cover; cook on Low heat setting 8 hours.

    Drain potatoes, discarding orange juice. Return potatoes to slow cooker. Mash potatoes with potato masher or spoon. Add whipping cream, syrup, butter, salt and pepper; stir until butter is melted and mixture is smooth. Sprinkle with toasted pecans.

Expert Tips

  • To toast pecans, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown.
