Flavored drink mixes lend their hues and flavors to plain frosting, sandwiching pairs of wafer cookies into colorful confections.

Rainbow Cookie Sandwiches

Ingredients

  • 3 tablespoons butter or margarine, softened
  • 2 cups powdered sugar
  • 1 to 2 tablespoons milk
  • 3 packages (0.13 to 0.19 oz each) unsweetened soft drink mix (3 colors)
  • 1 box (12 oz) vanilla wafer cookies

Instructions

    In small bowl with electric mixer, beat butter, powdered sugar and milk on medium speed until smooth.
  • Step

    Divide mixture evenly into 3 small bowls. Into each bowl of mixture, stir 1/8 teaspoon of 1 flavor drink mix until mix is dissolved.

    For each sandwich cookie, spread about 1 teaspoon frosting on bottom of 1 cookie. Top with second cookie, bottom side down.
