Pork with Plum Sauce

Ingredients

  • 3 cups hot cooked rice (cooked as directed on package)
  • 1 tablespoon oil
  • 3/4 lb. pork tenderloin, cut into thin bite-sized strips
  • 1 garlic clove, minced
  • 1 teaspoon Chinese five-spice powder
  • 2 medium zucchini, cut into thin bite-sized strips
  • 1 (8-oz.) can pineapple tidbits, drained
  • 1/2 cup purchased plum sauce
  • 1/4 cup chopped toasted almonds, if desired

Instructions

    While rice is cooking, heat oil in large skillet or wok over medium-high heat until hot. Add pork, garlic and five-spice powder; cook and stir 3 to 5 minutes or until pork is no longer pink.

    Add zucchini; cook and stir 2 to 3 minutes or until crisp-tender. Stir in pineapple and plum sauce; cook just until thoroughly heated. Serve pork mixture over rice. Sprinkle with almonds.
