Ingredients

  • 1 can (16 1/2 oz) purple plums in syrup, drained, 1/2 cup syrup reserved and plums pitted
  • 1 box (16.6 oz) date quick bread and muffin mix*
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons vegetable oil
  • 1 egg

    Heat oven to 350°F. Grease 8- or 9-inch springform pan. In food processor bowl with metal blade, place plums. Cover; process until smooth.

    In medium bowl, stir quick bread mix, pureed plums, reserved 1/2 cup plum liquid, ginger, cinnamon, nutmeg, oil and egg just until dry ingredients are moistened. Pour batter into pan.

    Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove side of pan. Cool 25 minutes.

    Traditionally, plum pudding is a steamed Christmas dessert, made with spices, fruits, nuts and bread crumbs. This bread is reminiscent of the traditional dessert. For a special spread, blend 1/4 cup plum jam and 1/3 to 1/2 cup softened butter. Serve it with the warm bread.
