Ingredients

  • 3/4 cup sour cream
  • 2 tablespoons finely chopped onion
  • 1 (3-oz.) pkg. cream cheese
  • 1 garlic clove, minced
  • Dash pepper
  • 2 cups water
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 2/3 cups mashed potato flakes
  • Chopped fresh parsley, if desired

    In small bowl, combine sour cream, onion, cream cheese, garlic and pepper; blend well. Set aside.

    In medium saucepan, combine water, butter and salt; bring to a rolling boil. Remove from heat; stir in milk and potato flakes with fork until blended. Add sour cream mixture to potatoes; blend well. Spoon into serving bowl; garnish with parsley.

  • The name says it all—the irresistible creaminess and super-quick preparation time make these mashed potatoes the best party potatoes! If by some chance you have leftovers after your dinner party, you can store mashed potatoes in an airtight container in a refrigerator for three to five days. If you make a big batch of these potatoes and want to freeze some individual portions for later, you can do that, too! Scoop individual portions of the potatoes onto a baking sheet lined with parchment. Freeze uncovered and then put the frozen portions into a freezer bag. To reheat straight from the freezer (or after thawing for a day or two in the fridge), place potato portions in a large pot on the stove on medium to low heat, stirring occasionally.
