Overnight Frosty Fruit Cups

Ingredients
- 1/2 cup frozen pineapple-orange juice concentrate, thawed
- 1 ripe banana, mashed
- 1 (20-oz.) can crushed pineapple in unsweetened juice, undrained
- 3 cups cut-up assorted fresh or canned fruit (such as strawberries, mango, mandarin orange segments, kiwi fruit, melon balls and/or grapes)
- 1 pint (2 cups) raspberry or orange sherbet
- 1 (20-oz.) bottle lemon-lime flavored carbonated beverage, chilled
- Fresh mint leaves

Step1In nonmetal storage container, combine juice concentrate, banana and pineapple; mix well. Cover; freeze at least 6 hours or overnight.

Step2In another nonmetal storage container, combine assorted fruit. Cover; refrigerate.

Step3About 2 hours before serving, place frozen pineapple mixture in refrigerator to soften slightly.

Step4Just before serving, spoon about 1/4 cup assorted fruit into each individual dessert dish. Add 1/4 cup frozen pineapple mixture. Top each with small scoop (about 2 tablespoons) sherbet. Add about 3 tablespoons carbonated beverage to each. Garnish with mint leaves.
