Ingredients

  • 1/2 cup frozen pineapple-orange juice concentrate, thawed
  • 1 ripe banana, mashed
  • 1 (20-oz.) can crushed pineapple in unsweetened juice, undrained
  • 3 cups cut-up assorted fresh or canned fruit (such as strawberries, mango, mandarin orange segments, kiwi fruit, melon balls and/or grapes)
  • 1 pint (2 cups) raspberry or orange sherbet
  • 1 (20-oz.) bottle lemon-lime flavored carbonated beverage, chilled
  • Fresh mint leaves

    In nonmetal storage container, combine juice concentrate, banana and pineapple; mix well. Cover; freeze at least 6 hours or overnight.

    In another nonmetal storage container, combine assorted fruit. Cover; refrigerate.

    About 2 hours before serving, place frozen pineapple mixture in refrigerator to soften slightly.

    Just before serving, spoon about 1/4 cup assorted fruit into each individual dessert dish. Add 1/4 cup frozen pineapple mixture. Top each with small scoop (about 2 tablespoons) sherbet. Add about 3 tablespoons carbonated beverage to each. Garnish with mint leaves.

    Any of your favorite fresh or canned fruits can be used in this recipe. Be sure to use one or two kinds of brightly colored fruits. They are very attractive and are generally rich in vitamins A and C.

    The frozen pineapple mixture with fruit concentrate can be prepared several weeks ahead and stored in an airtight container in the freezer. The assorted fruits can be prepared several hours ahead, divided among serving dishes and refrigerated.
  • tip 3
    Purchase a disposable plastic stemmed beverage glasses for serving this recipe. Use chilled champagne in place of the carbonated beverage.
