Beets get the sweet treatment with orange, honey and ginger in this easy slow-cooker side dish.

Ingredients

  • 6 large beets (about 5 lb), trimmed, peeled
  • 1 teaspoon grated orange peel
  • 1/3 cup fresh orange juice
  • 3 tablespoons honey
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon grated gingerroot
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Steps

    Spray 5-quart slow cooker with cooking spray. Place beets in slow cooker. In small bowl, stir together remaining ingredients with whisk; pour over beets.

    Cover; cook on Low heat setting 6 hours or until beets are tender. Remove beets from slow cooker; slice.
