Ingredients

  • 2 lb Yukon Gold potatoes, peeled, cut into 3/4-inch cubes
  • 1/4 cup butter, softened
  • 2/3 cup half-and-half, warmed
  • 4 1/2 teaspoons prepared horseradish
  • 1 teaspoon salt
  • 1 teaspoon stone-ground mustard
  • 1/2 teaspoon freshly ground pepper
  • 3 green onions, thinly sliced, if desired

Steps

    In 2-quart saucepan, place potatoes and enough water to cover. Heat to boiling; boil uncovered 15 minutes or until tender. Drain; return to saucepan.
  • 2
    Add remaining ingredients except onions; mash with potato masher to desired consistency. Sprinkle with onions.
