Ingredients
- 5 tablespoons margarine or butter, softened
- 1/3 cup sugar
- 1 teaspoon vanilla
- 1 egg
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 (16-oz.) can apricot halves, well drained
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
Instructions

Step1Heat oven to 375°F. Spray 9-inch round cake pan or springform pan with nonstick cooking spray.

Step2In large bowl, combine margarine and 1/3 cup sugar; beat until well blended. Add vanilla and egg; beat well. Stir in flour, baking powder and salt. Spread dough evenly in bottom of sprayed pan.

Step3Arrange apricot halves over dough. In small bowl, combine 2 tablespoons sugar and cinnamon; sprinkle over apricots.

Step4Bake at 375°F. for 20 to 25 minutes or until edges are golden brown. Cool 5 minutes.
