Spice up any weekend morning with these easy gingerbread pancakes.

Ingredients

  • 1 1/3 cups milk
  • 2 eggs
  • 3 tablespoons molasses
  • 2 cups all-purpose flour
  • 1/4 cup packed brown sugar
  • 3 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Steps

    Brush griddle or skillet with vegetable oil, or spray with cooking spray before heating. Heat griddle or skillet over medium-high heat (350°F).

    In large bowl, beat milk, eggs and molasses with whisk until blended. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy).

    Pour batter by 1/4 cupfuls onto hot griddle. Cook 1 to 2 minutes or until bubbly on top and dry around edges. Turn; cook other side until golden brown. Serve warm.
