Spice up any weekend morning with these easy gingerbread pancakes. MORE+ LESS-

Ingredients

cups milk

eggs

tablespoons molasses

cups all-purpose flour
1/4
cup packed brown sugar

teaspoons baking powder
1
teaspoon pumpkin pie spice
1/4
teaspoon ground ginger
1/4
teaspoon salt

    Brush griddle or skillet with vegetable oil, or spray with cooking spray before heating. Heat griddle or skillet over medium-high heat (350°F).

    In large bowl, beat milk, eggs and molasses with whisk until blended. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy).

    Pour batter by 1/4 cupfuls onto hot griddle. Cook 1 to 2 minutes or until bubbly on top and dry around edges. Turn; cook other side until golden brown. Serve warm.

Serve these gingerbread pancakes with sweetened whipped cream.

Want more ginger flavor? Increase ground ginger to 1/2 teaspoon.
