Almonds add a nutty flavor to this Asparagus and ham dish that’s sprinkled with Progresso® Bread Crumbs - ready in 45 minutes. A perfect side for any meal!

Crunchy-Topped Asparagus

Ingredients

  • 1 1/3 cups Hungry Jack® Mashed Potato Flakes
  • 1 1/3 cups water
  • 1/2 cup milk
  • 2 tablespoons margarine or butter
  • 1/4 teaspoon salt
  • 1 (1.25 to 1.6-oz.) pkg. cheese sauce mix
  • 1 1/4 to 1 1/2 cups milk
  • 1 tablespoon oil, margarine or butter
  • 1 cup finely chopped cooked ham
  • 1 (15-oz.) can green asparagus spears, drained
  • 1/2 cup Progresso™ Plain Bread Crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons margarine or butter, melted
  • 1/3 cup slivered almonds, toasted*
  • Parsley

Instructions

    Heat oven to 350°F. Grease 10x6-inch or 8-inch square (1 1/2-quart) glass baking dish. Prepare potatoes as directed on package using water, 1/2 cup milk, 2 tablespoons margarine and salt.

    Meanwhile, prepare cheese sauce with 1 1/4 to 1 1/2 cups milk and 1 tablespoon oil as directed on package. Stir in ham.

    Spoon and spread mashed potatoes in greased baking dish. Top with asparagus spears. Spoon cheese sauce mixture over asparagus.

    In small bowl, combine bread crumbs, cheese and 2 tablespoons margarine; mix well. Sprinkle over mixture in baking dish.

    Bake at 350°F. for 16 to 22 minutes or until light golden brown. Sprinkle with almonds. Garnish with parsley.
