Chopped Harvest Vegetable Layered Salad

Ingredients

Salad

  • 2 cups thinly sliced fresh spinach leaves
  • 1 cup chopped fresh cauliflower florets
  • 1 cup chopped fresh broccoli florets
  • 1/2 cup chopped red onion
  • 1/2 cup chopped seeded cucumber
  • 1 cup chopped tomato

Dressing

  • 3/4 cup light mayonnaise
  • 1/4 cup purchased reduced-calorie French salad dressing
  • 2 tablespoons chopped fresh parsley

Topping

  • 1/2 to 1 cup herb-flavored croutons

Instructions

  • Step

    In 1 1/2 to 2-quart glass bowl with straight sides, layer salad ingredients in order listed.

    In small bowl, combine all dressing ingredients; mix well. Spread over top of salad. Sprinkle with croutons. Serve immediately, or cover and refrigerate until serving time. If desired, toss before serving.
