Chopped Harvest Vegetable Layered Salad

Ingredients
Salad
- 2 cups thinly sliced fresh spinach leaves
- 1 cup chopped fresh cauliflower florets
- 1 cup chopped fresh broccoli florets
- 1/2 cup chopped red onion
- 1/2 cup chopped seeded cucumber
- 1 cup chopped tomato
Dressing
- 3/4 cup light mayonnaise
- 1/4 cup purchased reduced-calorie French salad dressing
- 2 tablespoons chopped fresh parsley
Topping
- 1/2 to 1 cup herb-flavored croutons
Instructions

Step1In 1 1/2 to 2-quart glass bowl with straight sides, layer salad ingredients in order listed.

Step2In small bowl, combine all dressing ingredients; mix well. Spread over top of salad. Sprinkle with croutons. Serve immediately, or cover and refrigerate until serving time. If desired, toss before serving.
