Cashew Cardamom Nuggets

cup chopped cashews

to 1 teaspoon cardamom

teaspoon grated orange peel

(8-oz.) pkg. whole pitted dates

cup powdered sugar

decorative paper candy cups

tablespoons crystallized ginger

    In food processor bowl with metal blade, combine cashews, cardamom, orange peel and dates; process until smooth.

    Firmly press mixture into 3/4-inch balls. Roll balls in powdered sugar. Place in candy cups. Garnish with crystallized ginger.

Expert Tips

  • Cashew Cardamom Nuggets Do not use packaged chopped dates in place of the whole dates. Chopped dates have a light sugar coating that will cause the mixture to be too crumbly to hold together.
