Ingredients

Salad

medium cucumber

(10-oz.) pkg. European or Italian salad greens

(9-oz.) pkg. refrigerated grilled chicken strips

slices precooked bacon, cut into pieces

medium tomato, cut into thin wedges

Dressing

1/2
cup mayonnaise or salad dressing

teaspoon sugar
2
teaspoons lemon juice
1
garlic clove, minced

    Shred half of cucumber; reserve. Slice remaining cucumber. In large bowl, combine sliced cucumber and all remaining salad ingredients.

    In small bowl, combine shredded cucumber and all dressing ingredients; mix well. Spoon dressing over salad; toss gently to coat.

Expert Tips

Use leftover grilled or roasted chicken in place of packaged chicken strips. Cut the chicken into 1/2-inch strips and measure 2 cups.

To reduce the fat in each serving of this salad by about 23 grams, use turkey bacon and reduced-fat mayonnaise or salad dressing. Each serving of the lighter salad contains about 180 fewer calories than each serving of the original recipe.
