Bean Burgers with Oregano-Sour Cream Sauce

Ingredients
- 1/2 cup nonfat sour cream
- 2 tablespoons chopped green onions
- 1/4 teaspoon dried oregano leaves
- 1/8 teaspoon salt
- 1 (15.5-oz.) can kidney beans, drained, rinsed
- 3 tablespoons unseasoned bread crumbs
- 1/4 teaspoon garlic powder
- Dash ground red pepper (cayenne)
- Dash pepper
- 1 egg, beaten
- 1 teaspoon margarine or butter
- 4 burger buns, split
Instructions

Step1In small bowl, combine sour cream, onions, oregano and salt; mix well. Refrigerate until serving time.

Step2In medium bowl with fork or in food processor bowl with metal blade, mash beans well. Add bread crumbs, garlic powder, ground red pepper, pepper and egg; mix well. Mixture will be soft. With wet hands, shape mixture into 4 patties, 1/2 inch thick.

Step3Melt margarine in medium nonstick skillet over medium heat. Cook bean patties 5 minutes. Turn and flatten slightly; cook an additional 5 minutes or until thoroughly heated and set. Serve in buns with sour cream sauce.
