Apple Enchiladas

This apple dessert is a sweet take on a Mexican favorite, drizzled in caramel.

Ingredients

  • 4 apples, peeled, cored and cut in wedges
  • 1/4 cup butter
  • 1/4 cup packed brown sugar
  • 4 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
  • Cooking spray
  • Vanilla ice cream
  • 1/4 cup caramel sauce, warmed

Steps

    Heat oven to 450°F. Spray 8- or 9-inch (2-quart) square baking dish with cooking spray.

    In 10-inch skillet, heat apples and butter over medium heat 5 to 7 minutes or until apples are tender. Add brown sugar, and cook until melted.

    Spoon one-fourth of the apples on each tortilla, and roll up. Place seam side down in baking dish. Spray tops of enchiladas with cooking spray.

    Bake 10 to 15 minutes or until golden brown.

    Serve with ice cream and drizzled with caramel sauce.

    Any crisp apple will work in this recipe. I used Fuji apples.
