Ingredients
- 1 cup Gluten Free Chex™ Granola Mix Honey Nut
- 1/2 cup pitted dates, packed
- 1/4 cup finely chopped candied ginger
- 1 tablespoon water
- 1/2 cup quick-cooking oats
- 1/4 cup peanut butter
- 2 tablespoons brown rice syrup or honey
- 1/4 teaspoon ground ginger
Instructions

Step1Line 8x4- or 9x5-inch pan with foil or cooking parchment paper. Spray foil with cooking spray. In large bowl, place granola; set aside. In food processor, add dates, candied ginger and 1 tablespoon water; pulse in 1-second bursts about 30 seconds or until finely chopped. Scrape as needed. Add oats, peanut butter, brown rice syrup and ginger; process until mixture comes together into a ball.

Step2Transfer date mixture to bowl of granola. Lightly spray hands with cooking spray; use hands to blend mixture. Use palm of hand and fingers to very firmly press mixture evenly into pan, pressing down to compact mixture until firm.

Step3Refrigerate about 1 hour or until firm enough to cut. For squares, cut into 3 rows by 6 rows. Store covered in refrigerator up to 1 week.
