While chili enthusiasts might not consider white chili actually a chili, we beg to differ. Traditional chili has a tomato, chile, and cumin-based sauce with beef (or other meat chunks), and beans (many kinds to choose from) simmered together to create a flavorful, stew-like dish. White chicken chili gets its name from the ingredients that differentiate it from traditional chili. It omits the red sauce entirely. While still having many similarities as well as ingredient twists, we like to think of it as traditional chili’s creamy cousin.
