If you’ve got leftover pulled pork, we’ve got the perfect way to use it up! This pulled pork waffle grilled cheese takes the classic combo of savory cheesiness and smoky-sweet barbecue flavor to the next level. With Pillsbury™ Grands!™ Biscuits as the “bread,” every bite is crispy on the outside, soft and fluffy inside, and packed with melty cheese and tender pork. It’s an easy, fun twist that turns leftovers into something totally unique and crave-worthy!

Recipe Ingredients

Here’s everything you’ll need to create these delightfully cheesy BBQ Pork Waffle Melts.

Pulled Pork: This is a great use for leftover pulled pork, but you can also use store-bought pulled pork! Look for it in the refrigerated meat section or with prepared foods.

Barbecue Sauce: Use your favorite! If you’re serving kids, go for something sweeter and mild.

Pillsbury™ Grands!™ Biscuits: We only tested this recipe with refrigerated Southern Homestyle. If you use another variety of biscuits, you may need to adjust bake time.

Cheese: Experiment with your favorite melty cheeses! Monterey Jack is mild and buttery, but cheddar or Swiss would be great substitutes.

Coleslaw: Make your own from a salad kit, or better yet, buy it already prepared from the deli. We love a classic, creamy slaw to top these waffle melts.

Other Ingredients You’ll Need: Pickle relish, butter, salt.

1. Make the Filling

Combine the pork, sauce, and relish in a bowl.

2. Prepare the Biscuits

Pop open the can and separate the biscuits. Pull each biscuit apart to separate it into 2 equal pieces to get 16 biscuit rounds. Flatten or roll them to enlarge.

3. Fill the Sandwiches

Distribute filling among half of the biscuit rounds, top with the other half of biscuit rounds, seal to enclose the filling.

4. Waffle and Serve

Brush each sandwich with melted butter and cook on the waffle iron until golden brown and crispy. Serve with coleslaw!

How to Store (and Reheat) BBQ Pork Waffle Melt

Here’s how to store and reheat your leftovers.

Refrigerator  

Transfer leftover sandwiches to an airtight food storage container or resealable food-storage plastic bag. Store in the fridge for up to 4 days. Refrigerate any leftovers within 2 hours of serving.

Freezer 

Freeze individual portions in an airtight food storage container.

Reheating 

Thaw any frozen portions in the refrigerator before reheating. To reheat, transfer sandwiches to a baking sheet. Heat in the oven at 375°F for 8 to 10 minutes, flipping halfway through, or until the food is hot and at least 165°F in the center of the filling (use a food thermometer).

    Heat a waffle iron. If waffle iron has more than one heat setting, choose Medium-High.

    In a medium bowl, mix together the pulled pork, barbecue sauce, and relish. Set aside until ready to use.

    Open the can of biscuits, and gently separate each biscuit into two parts to get 16 rounds. On a cutting board or other surface, use your hands to gently press each round into an approximately 4-inch circle. Alternatively, use a rolling pin to roll out each round.

    Evenly distribute the pulled pork mixture onto 8 of the rounds, about 2 tablespoons each. Top each with two squares of Monterey Jack cheese. Place the remaining biscuit dough rounds on top of the cheese, covering the filling to form 8 sandwiches. Gently press down around the edges with your fingers to enclose the filling, then use the tines of a fork to crimp the sides of each sandwich and seal it closed.

    In a small bowl, mix the butter and salt. Brush the top and bottom of each biscuit sandwich with the butter mixture.

    Cook the sandwiches in a waffle maker for 3 to 4 minutes, until golden brown, slightly crispy, and cooked through. The filling should register at least 165°F on an instant read thermometer. Depending on your waffle maker, you may be able to cook up to 4 waffle sandwiches at a time.
