Bloggers Adam and Joanne Gallagher from Inspired Taste make mini multigrain bites topped with ricotta cheese, fresh tomatoes and mint.

Ingredients

can (13.8 oz) Pillsbury™ refrigerated artisan pizza crust with whole grain*
Cooking spray
1/2
cup ricotta cheese
1/2
cup cherry tomatoes, sliced
2
tablespoons finely sliced fresh mint leaves
Salt and freshly ground pepper

Steps

  • 1 Heat oven to 400°F. Line cookie sheet with cooking parchment paper or foil.
  • 2 Unroll dough on work surface; starting at center, press dough into 22x14-inch rectangle. Using 2-inch round cutter, cut out 24 circles. Place circles on cookie sheet; spray circles lightly with cooking spray.
  • 3 Bake 5 to 10 minutes or until lightly browned.
  • 4 Top each baked circle with 1 teaspoon ricotta cheese, a few tomato slices, some mint and a sprinkle of salt and pepper.

Expert Tips

*All breads made with at least 8 grams whole grain. At least 48 grams whole grain recommended daily.

Replace mint with basil.

Replace ricotta cheese with cream cheese.
