This no-fail way to prepare fish is bursting with a great lemon and garlic flavor, your friends won't soon forget. But it's so easy-peasy to make, you could even surprise your family with it for a tummy-warming weeknight dinner.

Ingredients

  • 1/2 cup butter, melted
  • 6 cloves garlic, finely chopped
  • 1/2 cup Gold Medal all-purpose flour
  • 1 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1/4 teaspoon ground red pepper (cayenne)
  • 4 (6 oz) halibut fillets, skin removed and patted dry (about 1-inch thick)
  • 2 tablespoons olive oil
  • 1/3 cup fresh lemon juice
  • 2 tablespoons water
  • 1 teaspoon dried oregano leaves
  • 1 cup halved grape or cherry tomatoes
  • 1/3 cup chopped Italian flat-leaf parsley
  • 1 teaspoon grated lemon peel

    In shallow dish mix melted butter and 1 teaspoon of the garlic. In another shallow dish, mix flour, coriander, salt, pepper and red pepper. Dip fish into melted butter, then coat with flour mixture (reserve remaining butter and flour mixture).

    In 12-inch skillet, heat oil over medium heat until. Add fish; cook 3 to 6 minutes, turning once, until browned on both sides. Remove fish from skillet; place on plate. Add remaining garlic, the lemon juice, water, oregano and reserved melted butter to skillet, scraping any brown bits from the pan. Using whisk, beat in 2 tablespoons remaining flour mixture until bubbly.

    Return fish to skillet. Reduce heat to medium-low. Cover and cook 3 to 4 minutes, or just until fish flakes easily with fork. Add tomatoes; cover remove from heat. Let stand 2 minutes. Top with parsley and lemon peel. Serve immediately.
