Ingredients

  • 2 eggs
  • 3/4 cup firmly packed brown sugar
  • 2 teaspoons vanilla
  • 1 cup chopped hazelnuts
  • 1 cup chopped dates
  • 1 cup chopped candied pineapple
  • 1 cup all purpose or unbleached flour
  • 1 teaspoon baking powder

Steps

    Heat oven to 350°F. Grease 9-inch square pan. In large bowl, beat eggs until light and fluffy. Add brown sugar, beat well. Add vanilla, hazelnuts, dates and pineapple; mix well.

    Lightly spoon flour into measuring cup; level off. Stir in flour and baking powder; mix well. Spread mixture in greased pan.

    Bake at 350°F. for 25 to 35 minutes or until edges are golden brown and center is set. Cool 15 minutes. Cut into bars. Cool 15 minutes or until cooled completely.

    Hazelnut Fruit Bars Hazelnuts, dates, and candied pineapple make these bars moist and rich. When the bars are cut, they look like pieces of fruit cake. Candied pineapple is available in its natural color, as well as red and green. Any color or variety looks good in these bars.
