Easy Fruit Pizza

A treat for your eyes, this colorful fresh-fruit pizza is made on a tasty Pillsbury® refrigerated sugar cookie crust. It tastes as good as it looks!

roll (16.5 oz) Pillsbury® refrigerated sugar cookies

package (8 oz) cream cheese, softened
1/3
cup sugar
1/2
teaspoon vanilla
2
kiwifruit, peeled, halved lengthwise and sliced
1
cup halved or quartered fresh strawberries
1
cup fresh or frozen blueberries
1/2
cup apple jelly

  • 1 Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray. In pan, break up cookie dough; press dough evenly in bottom of pan to form crust. Bake 16 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
  • 2 In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese. Stir jelly until smooth; spoon or brush over fruit. Refrigerate until chilled, at least 1 hour. To serve, cut into wedges or squares. Cover and refrigerate any remaining pizza.

To decrease the amount of fat in this recipe, use light cream cheese instead of regular.

I made this for the first time yesterday. I brought it for a memorial day party with my family and everyone loved it1 My brother in law told me it was his favorite dessert that I have ever made and brought over and said that I have to have this with me whenever I come over again. Making the crust was a little difficult for me and when I tried to cut it into squares after I chilled it some of the pieces broke up. But it was a hit!!

This is a great recipe. Try making it with chocolate chip cookie dough rather than sugar cookie. It's a favorite in our family. Top with kiwi, strawberries, blueberries, blackberries, mandarin oranges...any type of fruit.

A girlfriend makes this recipe but uses 8 oz of cream cheese mixed with one jar of MarshMallow Creme. Then uses a variety of fruits & berries. SUPER EASY and delicious.

It doesn't look like pizza, but I like to do mine in an oblong pan. After the cream cheese is spread, I cut it into squares then place the fruit on each square. Especially if it is for a baby/wedding shower...makes more and easy to serve - not too big of pieces. Also, this way each square has all of the fruit items. DS
