Sweet and Spicy Chicken with Winter Fruit Salsa

Serve this sweet and spicy broiled chicken topped with fruit salsa - a delicious dinner for four.

Ingredients

Salsa

  • 1/4 cup chopped red bell pepper
  • 1 seedless orange, peeled, chopped
  • 1 small pear, unpeeled, chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons orange juice

Glaze

  • 1/3 cup honey
  • 1 chipotle chile in adobo sauce (from 11-oz. can), finely chopped
  • 2 tablespoons adobo sauce from chipotle chile can

Chicken

  • 4 boneless skinless chicken breast halves

Steps

    In medium bowl, combine all salsa ingredients; mix well. Set aside.

    In small bowl, combine all glaze ingredients; mix well. Reserve 1 tablespoon glaze. Brush half of remaining glaze over 1 side of each chicken breast half; place on broiler pan, glaze side up.

    Broil 4 to 6 inches from heat for 6 minutes. Turn chicken; brush with remaining glaze. Cook an additional 4 to 7 minutes or until chicken is fork-tender and juices run clear. Drizzle chicken with reserved 1 tablespoon glaze. To serve, spoon salsa over chicken.

    Chipotle chiles are dried smoked jalapenos. They are sold pickled, dry or canned in adobo sauce.
  • tip 2
    To make clean-up easier, line the top part of the broiler pan with aluminum foil. Cut through the foil in a few spots to allow the grease from the meat to collect in the bottom half of the pan.

    When using chilies canned in adobo sauce, any leftovers can be frozen to use another time.

    Serve this sweet and spicy chicken dish with cornbread sticks and long grain white rice.
