Slow cook this delicious salad using sweet potatoes and maple syrup – perfect for dinner.

Ingredients

  • 6 large sweet potatoes (5 1/2 lb), peeled, cut into 2-inch cubes
  • 1 cup orange juice
  • 3/4 cup whipping cream
  • 1/2 cup real maple syrup
  • 1/4 cup butter, cut into pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 cup chopped pecans, toasted

    Spray 6-quart slow cooker with cooking spray. Place sweet potatoes in slow cooker; pour orange juice over potatoes.

    Cover; cook on Low heat setting 8 hours.

    Drain potatoes, discarding orange juice. Return potatoes to slow cooker. Mash potatoes with potato masher or spoon. Add whipping cream, syrup, butter, salt and pepper; stir until butter is melted and mixture is smooth. Sprinkle with toasted pecans.

    To toast pecans, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown.
