Hummus is a smooth blend of chickpeas, garlic, olive oil, lemon juice and spices. When sesame seed paste, or tahini, is added, the mixture is called “hummus bi tahina.” A Middle Eastern specialty eaten as pita bread spread, hummus is available in the deli or dairy section of the grocery store. Use plain humus in this recipe, or try a special flavor, such as roasted red peppers.
Pack extra humus or flavored butter to spread on the split croissants before filing them with meat stacks.
Take along frilly toothpicks and a few extra olives to insert into the top of each sandwich.
