Orange sections and cilantro give an unexpected accent to salad greens, while jicama (HEE-ka-mah) contributes crunchy texture.

Ingredients

  • 3 cups jicama cubes
  • 2 large oranges, peeled, sectioned or chopped
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup purchased sweet-and-sour sauce
  • 2 tablespoons rice vinegar
  • 6 cups torn assorted salad greens

Steps

    In large bowl, combine jicama, oranges, onion and cilantro; mix well. In small bowl, combine sweet-and-sour sauce and vinegar; mix until well blended. Pour over jicama mixture; mix lightly. Serve immediately, or cover and refrigerate until serving time.

    Just before serving, add salad greens; toss gently. If desired, garnish with halved scored orange slices and cilantro sprigs.
