Maple Apple Cake

Moist with apples, this cake keeps well for several days--in theory at least. However, once the family has a taste, you will probably find the cake disappears rapidly.

cups chopped peeled apples

cup chopped walnuts

Glaze

1/2
cup powdered sugar

tablespoons maple-flavored syrup

tablespoon butter, softened
1
tablespoon chopped walnuts

  • 1 Heat oven to 350°F. Grease and flour 12-cup fluted tube cake pan. In large bowl, combine sugar, brown sugar and 3/4 cup butter; beat until smooth. Add 3/4 cup syrup and eggs; blend well.
  • 2 Lightly spoon flour into measuring cup; level off. Add flour, baking powder, cinnamon, salt, nutmeg and allspice; mix well. Stir in apples and 1/2 cup walnuts. Spoon into greased and floured pan.
  • 3 Bake at 350°F. for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan. Cool 1 hour or until completely cooled.
  • 4 In small bowl, combine powdered sugar, 3 tablespoons syrup and 1 tablespoon butter; mix until smooth. Spoon over top of cake. Sprinkle with 1 tablespoon walnuts.

Very nice cake, not as moist as I thought. Maybe do to the fact that I used Granny Smith apples which hold their shape so well. This cake had everyone anxiously awaiting the finished product as it baked, it filled the house with a wonderful fruitcake-christmas-spicy aroma. But the finished product wasn''t really strongly maple or spice but a terrific blend of all ingredients. I have two people in my house who don''t like maple syrup but they didn''t coment on the maple flavor at all and ate their piece just like every one else. **I will probably use half the chopped apples next time and half applesauce.
