Chili is one of those tried-and-true recipes that’s handed down from generation to generation. We all have our favorite types of chili. Do you prefer your chili thick like a hearty stew, or do you prefer your chili on the soupy side? No matter where you stand in the debate, this recipe is perfect for you. It’s simple, and made with easy-to-find ingredients that you can tailor to your taste. Your family will simply fall in love.
Here’s what you need to do...
Pour olive oil in a large soup pot over medium heat. Once the oil is hot, add ground beef and season with salt, pepper and cumin. Cook over medium-high heat until browned.
Once the ground beef is browned, add the chili beans and salsa. Let simmer over medium heat for 10 minutes.
Now here’s the fun part. You actually bake the biscuits right on top of the chili, in either a 9x13 baking dish or in individual baking dishes.
If you’re making individual servings, place 1 1/2 cups of chili in individual oven-safe containers.
Sprinkle cheese and onion on top...
And then place a corn biscuit on top of the chili, and bake at 350˚F for 25-30 minutes.
Remove them from the oven and let cool for about 10 minutes.
If you’re using the 9x13 baking dish, pour your chili into the dish and cover with cheese and sliced onions. Place biscuits on top of the chili and bake at 350˚ for 30-35 minutes, or until the biscuits are browned on top.
Remove your chili from oven, let cool for at least 10 minutes. Serve with a dollop of sour cream, if you like. Break into the corn biscuit, dive into that chili and enjoy!
