In England, roast beef wouldn't be the same without Yorkshire pudding! The pudding, a cross between a popover and a souffle, is baked with drippings from the beef and should be eaten as soon as it emerges from the oven.

Ingredients

1/4
cup roast beef drippings*
2
eggs
1
cup all-purpose flour
1/2
teaspoon salt
1
cup milk

Steps

  • 1 Heat oven to 425°F. Pour beef drippings into ungreased 9-inch square pan; tilt pan to coat bottom and sides. Place pan in oven to heat about 2 minutes.
  • 2 In small bowl, beat eggs slightly. Add flour, salt and milk; beat just until blended. DO NOT OVERBEAT. Pour batter into hot pan.
  • 3 Bake at 425°F. for 15 minutes. Reduce oven temperature to 350°F.; bake an additional 10 to 15 minutes or until puffed and golden brown. Serve immediately.

Expert Tips

* One-fourth cup shortening, melted, can be substituted for roast beef drippings.
