Sausage Cornbread Stuffing

Ingredients

1: cup chopped onions

1: cup chopped celery

1/2: cup chopped green bell pepper

2: links sweet Italian turkey sausage (6 oz), casings removed, cut up

1: package (8 oz) cornbread stuffing mix (3 cups)

1/3: cup chopped pecans, toasted*

1/4: cup chopped fresh parsley

1: teaspoon dried sage leaves

1: teaspoon dried thyme leaves

1 3/4: cups Progresso® chicken broth (from 32-oz carton)

Directions

1 Heat oven to 325°F. Spray 10-inch ovenproof skillet with cooking spray. Heat over medium heat until hot. Add onions, celery, bell pepper and sausage; cook and stir 3 to 5 minutes or until sausage is no longer pink and vegetables are tender.
2 Add stuffing mix, pecans, parsley, sage and thyme to sausage mixture; mix well. Gradually stir in broth to moisten.
3 Bake, uncovered, at 325°F with turkey for last 20 minutes of roasting time.

*Pecans can be toasted up to 1 day ahead. To toast pecans, heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until golden brown. Cool; store in food-storage plastic bag or covered container until ready to use.

Southern stuffing often starts with cornbread. Combined with pecans, a trio of vegetables and a little sausage, this takes on an authentic regional flavor.

Along with the green bell pepper, I make my cornbread stuffing with an additional red and a yellow pepper (same measurements) plus a can of sweet creamed corn. If using the creamed corn, use the chicken broth only as needed because it may get too moist. This will be the most delicious stuffing you ever had! I get soo many compliments on this stuffing. I don't make it with the sausage though. Maybe I'll give it a try and it'll end up kicking it up a notch! Ha.
