2: eggs

1: cup sugar

1: cup dairy eggnog (not canned)

1/2: cup margarine or butter, melted

2: teaspoons rum extract

1: teaspoon vanilla

2 1/4: cups all-purpose flour

2: teaspoons baking powder

1/2: teaspoon salt

1/4: teaspoon nutmeg

Directions

1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan.* Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well.
2 Add flour, baking powder, salt and nutmeg; stir just until dry ingredients are moistened. Pour into greased pan.
3 Bake at 350°F. for 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool 1 hour or until completely cooled. Wrap tightly and store in refrigerator.

I have been making this for the Christmas holiday season for years , giving it as gifts for neighbors. Everyone loves it that tastes it! Very easy to make , freeze in small loaf pans. LOVE IT!!
