Dried Cherry-Nut Chicken Pasta Salad

Sweetened dried cherries, toasted almonds and bow tie pasta turn ordinary chicken salad into something pretty special.

Salad

oz. (3 cups) uncooked bow tie pasta (farfalle)

cups diced cooked chicken breast
1/2
cup sliced celery
1
(3.53-oz.) pkg. sweetened dried cherries
1/4
cup slivered almonds, toasted

Dressing

1/4
cup white wine vinegar
1/4
cup apple juice
3
tablespoons sugar
1/2
teaspoon dry mustard
1/2
teaspoon celery salt
1/4
cup oil
1/4
cup fat-free mayonnaise
2
teaspoons poppy seed

Directions

  • 1 Cook pasta to desired doneness as directed on package. Drain; rinse with cold water to cool. Drain well.
  • 2 In large bowl, combine cooked pasta, chicken, celery and cherries; mix well.
  • 3 In blender container, combine vinegar, apple juice, sugar, dry mustard and celery salt; blend until well mixed. With blender running, slowly add oil; blend until thick. Add mayonnaise and poppy seed; blend on low speed just until mixed.
  • 4 Pour dressing over salad; toss gently to coat. Fold in almonds.

What a refreshing pasta salad for springtime! I added some gorgonzola for added flavor.

Have made this recipe several times since you released it in May 2006; it really is a nice recipe and well received by all at "PotLuck" suppers. Would like to see more "PotLuck" recipes on your site. Have found that I need to increase the oil and mayo to 1/3 Cup instead of the 1/4 Cup recipe calls for.....think its because of how the pasta cooks...al dente or tender.

I love this salad...it has that burst of sweet from the cherries and makes it a much more interesting dish then regular chicken pasta salad. I grate the celery however, cause I don''t like biting into large chunks of it, but all in all, this is one of my favorite pasta salads.

I have had a pasta and turkey/chicken salad with dried cherries and liked them, but sometimes they are a bit rich and "mayonaisey", so when I saw this recipe, I decided to try it. Well, it was a hit at the party I brought it too, and better yet, my daughter loved it! Usually she doesn''t like her noodles with anything on them. We love the cherry flavored craisins and they would work great too! This was such a light and refreshing dressing and didn''t cover the flavors with too much topping. It was also very good the next day, so the dressing didn''t separate.Thanks for a great recipe!
