Corned Beef Biscuit Sandwiches

Take a Reuben in a new direction when you pile corned beef and Swiss on a fresh-from-the-oven biscuit.

Pillsbury® Grands!® frozen Southern Style Biscuits (from 25-oz bag)
2
oz thinly sliced cooked corned beef, coarsely chopped
2
tablespoons finely shredded Swiss cheese
2
teaspoons Thousand Island dressing
1
teaspoon butter or margarine, melted
1/8
teaspoon caraway seed

Directions

  • 1 Heat oven to 375°F. Place biscuits on microwavable plate. Microwave uncovered on Medium (50%) 45 to 50 seconds, turning over halfway through microwave time. (Biscuits should still be cold for easier handling.)
  • 2 On lightly floured surface, roll or press each biscuit into 5-inch round. Place half of corned beef on half of 1 biscuit round, 1/2 inch from edge. Top with 1 tablespoon cheese and 1 teaspoon dressing. Repeat with remaining biscuit round. Carefully fold to enclose filling. Press edges to seal.
  • 3 Brush tops of biscuits with butter; sprinkle with caraway seed. Bake 14 to 16 minutes or until golden brown.

I made mine with ham and italian cheese. They turned out really good! Wouldn't you know I forgot dressing. Of course with ham and that kind of cheese I wouldn't be using thousand dressing anyway. Probably a mustard mixture, spicey, honey, and French's regular. I'll get some corned beef for tomorrow. Pluse sourkraut, canned. I'll try it both ways, inside and on the side. ..

I wanted a simple take on a St. Paddy's Day dinner for myself and my husband and this certainly fit the bill. I was disappointed that there wasn't any cabbage/kraut in the dish, so I cooked up some packaged coleslaw mix with vinegar and then put about a tablespoon on top of the stuffing before closing up the biscuit. I found that the 'Southern Style' biscuits were a little difficult to track down, so it would be nice to know if I could substitute for another style.

I made these for St. Patrick's Day dinner and changed it up a bit! I used roast beef not corned and I used the whole wheat Grands Biscuits. I also used Honey Mustard. It was delicious! So I used two cans of the Whole Wheat Grands Biscuits rolled out. Then I added the roast beef, sliced swiss cheese and added a dollop of honey mustard to it. Then I pinched the edges and pressed with a fork all the way around. I baked them for 20 minutes at 350 degrees. My family loved them! I will definitely make them again!

I made something similar with their crescent roll dough and they were called mini Reuben appetizers. But they included sauerkraut. What's a Reuben without the Kraut? I think you could add 2 to 4 tablespoons and love the results. PS - I thought the directions with the cheese/meat mix were a little confusing. Couldn't tell immediately if you wanted it sprinkled on top or included with the meat. In the appetizer version, same ingredients are chopped together and become the filling. Plus 2 tablespoons of stone ground mustard. Excellent!

This is obviously a Rubin Sandwich so lets add the Sour kraut and serve with a spicy mustard or the tradition thousand Island dressing and you can even use Horse Radish Sauce and this would be great for a party served with Potato Salad or Macaroni Salad and Potato Chips(Kettle cooked).
