Chicken Salad For A Crowd

Ingredients

oz. (2 cups) uncooked orzo or rosamarina (rice-shaped pasta)

cups mayonnaise or salad dressing
1/4
cup half-and-half

tablespoon salt

teaspoons white pepper
2
tablespoons lemon juice
4
cups cubed cooked chicken
2
cups seedless green grapes, halved
2
cups (1 large) chopped seeded cucumber
1
cup chopped celery

  • 1 Cook orzo to desired doneness as directed on package. Drain; rinse with cold water.
  • 2 In large bowl, combine mayonnaise, half-and-half, salt, pepper and lemon juice. Stir in cooked orzo and all remaining ingredients; mix well. Cover; refrigerate at least 4 hours or overnight.

Orzo, a rice-shaped pasta, also goes by the name rosamarina, which means "rose of the sea."

To seed a cucumber, cut it in half lenghtwise and scrape out the seeds with a teaspoon, small melon baller or grapefruit spoon.

Substitute low-fat for regular mayonnaise and skim milk for half-and-half to slash the fat per serving from 16 grams to 3 grams.
