Tropical Lime Ice Cream Pie

Enjoy this citrusy frozen pie made using lime sherbet and ice cream topped with coconut cookie crumbs - perfect tropical dessert to treat your guests.

Ingredients

Crust

cups crisp coconut cookie crumbs
1/3
cup margarine or butter, melted

Filling

cups lime sherbet, softened

cups vanilla ice cream, softened

teaspoon grated lime peel, if desired

  • 1 In medium bowl, combine crust ingredients; mix well. Reserve 1 tablespoon crumb mixture for topping. Press remaining crumb mixture lightly in bottom and up sides of ungreased 9-inch pie pan.
  • 2 In large bowl, combine sherbet, ice cream and lime peel; blend until well mixed. Spoon into crust-lined pan, spreading evenly. Sprinkle with reserved crumb mixture. Freeze at least 2 hours or until firm.
  • 3 To serve, let pie stand at room temperature for about 10 minutes before cutting into wedges.

Use a food processor or blender to easily crush the cookies.

To keep this pie for another day, first freeze it solid. Place the frozen pie in a airtight freezer bag or freezer container, or wrap it tightly in freezer aluminum foil.

Garnish the pie with a dollop of whipped ram and a sugared lime candy fruit slice.
