cup fresh lime juice (2 limes)

cups Progresso® chicken broth (from 32-ounce carton)

cloves garlic, finely chopped

teaspoon dried thyme leaves

teaspoon pepper

tablespoons butter or margarine

cup uncooked instant rice
Chopped fresh parsley, if desired

  • 1 Place chicken in 3- to 4-quart slow cooker.Add remaining ingredients except rice and parsley.
  • 2 Cover and cook on low heat setting 8 to 10 hours. During last 15 minutes of cooking, stir in rice.
  • 3 Remove chicken from cooker. Place cooked rice on each serving plate. Top with chicken. Spoon any remaining juices over chicken. Garnish with parsley.

This is a delicious and economical recipe besides being pretty easy. Instead of instant rice parboil a cup of uncooked long grain white rice. Boil the rice for 10 minutes in 2 cups of the chicken broth. Immediately add to slow cooker. Or completely finish the rice then add to slow cooker. Rice made on the stovetop (1 cup rice, 2 cups water or broth) is simple. Bring to a hard boil then cover pot and turn the fire down to very low. 20 minutes after covering rice it will be done just right. Do not uncover while rice is cooking.
