Slow-Cooker Caramelized Onion Dip

Enjoy this creamy caramelized onion dip sprinkled with bacon and parsley - a perfect slow-cooked condiment.

Ingredients

3/4 lb sweet onions, chopped (5 3/4 cups)
1/2 cup balsamic vinegar
1/4 cup butter or margarine, cut into pieces
3
packages (8 oz each) cream cheese, softened
1
cup whipping cream
1
cup crumbled blue cheese (4 oz)
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
4
slices thick-sliced bacon, crisply cooked, crumbled (1/2 cup)
1/2 cup chopped fresh parsley

Steps

  • 1 Spray 4-quart slow cooker with cooking spray. In slow cooker, mix onions, vinegar and butter. Cover; cook on Low heat setting 8 hours or until onions are golden brown.
  • 2 In large bowl, beat cream cheese with electric mixer on medium speed until creamy. Add whipping cream; beat on low speed until smooth. Stir in blue cheese, salt and pepper until well blended. Add cream cheese mixture to onion mixture in slow cooker; stir until blended.
  • 3 Cover; cook 20 minutes longer or until thoroughly heated. Sprinkle with bacon and parsley.
