box Pillsbury® refrigerated pie crusts, softened as directed on box

cup packed brown sugar

cup cornstarch

cups sliced fresh or frozen (thawed, drained) peaches

roll (16.5 oz) Pillsbury® refrigerated sugar cookies

  • 1 Heat oven to 375°F. Remove pie crusts from pouches. Unroll and stack crusts one on top of the other on lightly floured surface. Roll to 17x12-inch rectangle. Fit crust into 15x10x1-inch pan, pressing into corners. Fold extra pastry under, even with edges of pan. Crimp edges.
  • 2 Mix brown sugar, cornstarch, lemon juice and salt. Stir in peaches to coat. Spoon peach mixture into crust-lined pan.
  • 3 Break cookie dough into coarse crumbs; spoon crumbs evenly over filling.
  • 4 Bake 50 to 60 minutes or until crust is golden brown and filling is bubbling. Cool on rack 45 minutes.

I made this last week, except I used a large can of peaches from Sam's Club. I drained the peaches and added in some cinnamon, vanilla and nutmeg. I had a larger roll of sugar cookie dough than what the recipe called for, but I used all of it on the pie. It was delicious!

This has become a big hit with my family. The ease with making and the best with flavor makes it a big plus for my busy crew. I have even added a frozen bag of mixed frozen fruit and it is equally loved.

Came out amazing! Only changes made were to add some spices, cloves, ginger, and cinnamon.... Family and co-workers loved it!

This was really yummy! I thought it was going to be too sweet with the cookie crumble on top, but it wasnt at all. It was just right it hit the perfect sweet spot!

I added afew more peaches (love peaches) but the cookie top was much too sweet for us. will not make again. will stick to a traditional crumb topping or cobbler mix for top.
